Lockdown Recipes: American Cherry Shortcake

As the lockdown continues, SERC staff and students have kept their cookery and baking skills as sharp as their kitchen knives with weekly food recipes designed to tantalise the taste buds.

This week’s recipe shows you how to make your own American Cherry Shortcake. 

Ingredients (Serves 6)

  • 275g self-raising flour
  • 1 ½ Tbsp baking powder
  • 75g butter, diced
  • 50g caster sugar
  • 1 medium free-range egg, beaten
  • 3-4 Tbsp milk
  • 1 x 400g tin of cherry pie filling
  • 150ml whipping cream
  • 4 Tbsp custard

Method:

  • Preheat oven to 220°C. Lightly grease a baking sheet, then sprinkle with a little flour.
  • To make the shortcake, sift the flour, baking powder and a pinch of salt into a bowl. Rub in the butter until the mixture resembles fine breadcrumbs. Stir in the caster sugar. Make a well in the centre of the dry ingredients and add the egg and milk. Stir with a round-bladed knife until large clumps form. Bring together with one hand and knead lightly on a floured surface until smooth.
  • Place the shortcake on the prepared baking sheet and roll out to a 20.5cm/8” round. Bake for 20 minutes until risen and golden brown. Cool for 5 minutes then transfer to a cake rack; leave until cold.
  • Place the cherry pie filling in a bowl and stir in 2-3 Tbsp hot water. Leave to cool. Whip the cream until softly peaking then fold in the custard with a large metal spoon.
  • Place the shortcake on a serving plate and top with the cream mixture. Spoon half of the cherry mixture on top and serve the remainder separately. Best eaten within two hours of making.
