Lockdown Recipes: Cachaça Grilled Chicken

As the lockdown continues, SERC staff and students have kept their cookery and baking skills as sharp as their kitchen knives with weekly food recipes designed to tantalise the taste buds.

This week’s recipe shows you how to make your own Cachaça Grilled Chicken. Cachaça is a popular Brazilian spirit which you may be able to find in Tesco or somewhere similar, if not you can substitute it for a plain white rum. The recipe is as follows:  

Ingredients (Serves 4)

  • 500g boneless, skinless chicken thighs 
  • 3 garlic cloves, finely crushed 
  • ½ Tsp dried or fresh chopped oregano 
  • 4 Tbsp cachaça (Brazilian sugar cane spirit– you should be able to buy it in Tesco!) 
  • 2 Tbsp olive oil   
  • 1 Tsp sea salt 
  • ½ Tsp freshly ground black pepper 
  • Few sprigs of flat-leaf parsley, finely chopped 
  • Lime wedges, to serve 

Method 

  1. Open out the chicken thighs and place them on a chopping board. Cover with clingfilm and bash with a meat mallet or rolling pin until the meat is of an even thickness.  
  2. Place in a shallow dish and add the garlic, oregano, cachaça, olive oil, salt and pepper. Toss the chicken in the marinade. Cover with clingfilm and chill for 4 hours.  
  3. Remove the chicken from the fridge 30 minutes before cooking; let it come to room temperature. Light the BBQ and let the flames die down before starting to cook or heat a griddle pan until hot.  
  4. If you like, thread the chicken on to metal skewers, which will make it easier to turn them. Cook for 3-5 minutes on each side until just cooked through.  
  5. Leave to rest for 5 minutes before serving with a sprinkling of chopped parsley and lime wedges on the side.
