College Cuisine: One-Pot Chicken and Bacon Pie

SERC staff and students are keeping their cookery and baking skills as sharp as their kitchen knives with weekly food recipes designed to tantalise the taste buds.

This week’s recipe shows you how to make your own College Cuisine: One-Pot Chicken and Bacon Pie. The recipe is as follows:

Ingredients:

  • 4 chicken breasts diced quite chunky  
  • 1 packet back bacon smoked or unsmoked your preference 
  • ½ onion, finely diced
  • 1 punnet of button mushrooms, quartered
  • 1 small leek shredded  
  • 150g butter approx.  
  • 1-pint chicken stock approx.  
  • 100 g plain flour 
  • 2 cloves garlic made into a puree  
  • Chopped parsley optional  
  • 100g grated cheese  
  • 100 ml double or whipping cream  
  • 1 packet shop bought savoury stuffing or make your own your choice  
  • 2 lb potatoes diced into cubes and par boiled until tender  

Method:  

  1. Place a pot on a medium heat add 100g butter and your diced chicken, stir until chicken starts to cook remaining white with no browning  
  2. Cut your bacon into dice and add to the chicken, continue cooking until bacon is almost cooked  
  3. Add your mushrooms to the pot followed by the shredded leeks, stirring constantly  
  4. Add the flour to your chicken mixture in the pot, combine well with no lumps and cook out for about a minute  
  5. Gradually add the stock stirring so that it is well combined to form a sauce, add cream and leave on a low heat until everything is cooked through  
  6. Melt the remaining 50g of butter add the garlic puree and chopped parsley them toss with the cooked potatoes  
  7. Decant the chicken mixture into a pie dish  
  8. Top with the stuffing, then the garlicky potatoes then sprinkle with the grated cheese  
  9. Place in a hot oven until golden and piping hot
