College Cuisine: Grilled Thai Salmon

SERC staff and students are keeping their cookery and baking skills as sharp as their kitchen knives with weekly food recipes designed to tantalise the taste buds.
This week’s recipe shows you how to make your own Grilled Thai Salmon, a recipe courtesy of Sarah Muldrew, SERC Cook/Supervisor, School of Hospitality, Management, Tourism and Languages. It is only 351Kcal per serving and full of vitamins, omega-3 and protein. The recipe is as follows:
Ingredients (Serves 4)
- 4 responsibly sourced Salmon fillets
- 1 ‘thumb sized’ piece of fresh ginger
- 1 Red chilli pepper (to taste)
- 5 Spring onions
- Abt 1 Tbsp dark soy sauce (to taste)
- 1 tsp castor sugar
- Handful of fresh coriander leaves
- Sunflower oil
Method:
- Heat grill to high. Place the fish in a shallow baking dish, then grill for 4-5 mins until mostly cooked through, but still a little pink in the centre. Cover and set aside.
- Heat a wok, add the oil, then stir-fry the ginger, chilli and spring onions for 2-3 mins.
- Stir in the soy, sugar and a splash of water, then take off the heat. Throw in the coriander and serve immediately with the salmon. Delicious with rice or noodles.
