Christmas wouldn’t be Christmas without a mountain of rich and fruity homemade mince pies.
Sweet Pastry
203g Plain Flour
79g Icing Sugar
79g Butter
1 Egg
1 jar mince meat
½ dessert apple (finely diced)
Method
1. Put flour, icing sugar & butter into mixing bowl using paddle attachment.
2. Mix on low speed to resemble breadcrumb
3. Add together being careful not to overwork
4. Wrap in paper or cling film rest in fridge for 1hr
5. Brush inside of bun tin with soften butter & line with paper
6. Pin out pastry on lightly floured bench – cut in rings
7. Line bun tin with pastry
8. Mix the apple into mincemeat and spoon a tablespoon into each case
Choose your Toppings
Viennese biscuit topping :
225g butter
90g icing sugar
225g flour
75g cornflour
Splash of vanilla
Method
Cream butter, sugar & vanilla
Add flour & cornflour
Mix to light pliable dough
Pipe mix onto mince pies using a star knozzle
Any remaining mix can be piped into biscuits
Or
Frangipane Topping
100g butter
100g sugar
2 eggs
100g ground almonds
50g flour
Method:-
Cream butter & sugar
Add eggs little at a time combining before adding more egg
Scrape down sides of bowl with spatula.
Add flour & almonds mix until incorporated.
Pipe onto top of mince pies
Bake for 15-20 mins at 200 C / 180 fan / gas 6 until the biscuit tops are just turning golden.
Allow to cool and dust with icing sugar to serve
