As the lockdown continues, SERC staff and students have kept their cookery and baking skills as sharp as their kitchen knives with weekly food recipes designed to tantalise the taste buds.

This week’s recipe shows you how to make your own Steak with Fried Garlic.

Ingredients (Serves 4) 

  • 1 Tbsp olive oil 
  • 2 Tbsp butter 
  • 4 rib-eye steaks (about 225g each) 
  • Sea salt and freshly ground black pepper 
  • 4 garlic cloves, thinly sliced 
  • Small handful of flat-leaf parsley, finely chopped. 

Method (Marinade) 

  • Place a large, heavy-based frying pan over a high heat. Add olive oil and 1 tbsp butter. Season the steaks liberally with salt and pepper, then cook for 2-4 minutes on each side, depending on how you like them cooked. Remove the steaks and leave to rest for a few minutes.  
  • Meanwhile, heat the remaining butter in another small pan and add the garlic slices. Fry over a medium-low heat until golden and crisp. Tip the garlic and melted butter into a bowl. 
  • Spoon the crispy garlic slices and butter over the steaks, sprinkle over a little chopped parsley and serve.
