College Cuisine: Beef and Broccoli Noodles

SERC staff and students are keeping their cookery and baking skills as sharp as their kitchen knives with weekly food recipes designed to tantalise the taste buds.

This week’s recipe shows you how to make your own Beef and Broccoli Noodles. The recipe is as follows:

Ingredients (Serves 4) 

  • 2 blocks egg noodles   
  • ½ head broccoli, cut into small florets   
  • 1 tbsp sesame oil   
  • ½ kg beef stir fry strips   
  • 25g spring onions

Ingredients (Sauce) 

  • 2 tbsp low fat soy sauce 
  • 2 tbsp oyster sauce   
  • 1tbsp tomato ketchup   
  • 1oz grated ginger  
  • 1 tbsp white wine vinegar 

Method 

  1. To make the sauce, mix all the sauce ingredients together in a bowl. 
  2. Boil the noodles in a separate pot as per the instructions on the packet.   
  3. Add the broccoli into your noodles 1 minute before the noodles are ready.    
  4. Stir fry the beef until well browned, add the sauce mixture, stir and let simmer. Then turn off heat.   
  5. Add your drained noodles and broccoli into the beef and stir well.  
  6. Season well and serve with sliced spring onions to garnish.
