Course Overview

The Traineeship programme will allow participants to achieve a full Level 2 qualification and will comprise the following key elements:

  • A main vocational based qualification
  • Vocational skills development
  • Transversal and digital skills
  • Work placement Literacy and numeracy qualifications at Level 2 (may include GCSE qualifications in English and Mathematics)
  • Additional qualifications deemed necessary for work within a sector e.g Food Safety, Allergen Awareness 

You wish to learn core skills in baking and patisserie which may lead to a career as a patisserie chef or baker in the catering and hospitality sector. You have a passion for baking which you would like to develop, either as a hobby, career or business start-up.

How to develop core practical skills and understanding in a wide range of bread making, pastry work, flour confectionary and cake decoration techniques. Professional standards of producing, finishing, packaging, and presenting baked goods for sale.

The modern Industry Standard kitchens on each campus where you will produce fresh bakery produce each session, guided by the enthusiastic teaching team in a professional and supportive environment.

Successful completion of this programme will equip you with the skills to start a career as a baker or pastry chef within the catering and hospitality sector, or to further training on a Level 3 Patisserie and Confectionary programme. The opportunity to link with our Enterprise Team and avail of support in starting your own small bakery business.

4 GCSEs grade D-G, including grade E in maths and grade E in English or equivalent. Applicants that have not obtained the above grades may be eligible to enrol as an Introductory Trainee. Please contact us for further information.
