Course Overview
- Optimise the nutritional and therapeutic value of food
- Prepare nutritious meals without compromising on flavour
- Learn to use fresh and tasty ingredients to support key aspects of health.
Through a combination of in-class sessions, cookery demonstrations and tastings, you will discover how to use fresh natural ingredients to cook tasty, body-nourishing recipes. You will also learn the nutritional and therapeutic value of foods and what makes a balanced meal. We believe that healthy food can and should be delicious and nutritious!
Course Modules
Intro/Overview of course Where did it all go wrong? The Standard Western Diet/Ultraprocessed Foods/Getting back to a ‘real Food’ approach
The immune system Can we help support it’s functioning with food? Yes! How the immune system functions (v basic)/importance of polysachharides/zinc/vitamin C/garlic
Fibre Our digestive health – let’s talk poo! Focus on soluble and insoluble fibre/functions of (including gut microbiota/easy ways to boost intake/healthy swaps (minestrone soup makeover)
Sugar and blood sugar balance Do you get ‘hangry’ or mid-afternoon snoozy? The white stuff should go. Sugar/added sugar/food labelling/clever marketing/food manufacturing and hyper-palatability/smart swaps and how reduce it/snacking
Heart Health The Mediterranean diet: not all fat is bad fat! How we can make the Mediterranean diet work for us/what foods to include/quality over quantity/portion sizes
How to reduce inflammation An anti-inflammatory way of eating: Eat the Rainbow Overview of phytonutrients, antioxidants, gut health
